2 1- inch ribeye steaks 2 tbsp canola oil Salt Pepper 3 tbsp salted butter 1 shallot thinly sliced 3 garlic cloves minced 1 cup heavy whipping cream 1 tsp heaping Dijon mustard 1/4 cup blue cheese crumbles 1/3 cup freshly grated Parmesan cheese 1 tsp sugar

Let steaks rest at room temperature for 30-45 minutes before cooking.
Preheat oven to 450°F (232°C).
Heat an oven-safe skillet over medium-high heat and add canola oil. Pat steaks dry and season both sides with salt and pepper.
