Ingredients
  

  • 6 ripe Roma tomatoes
  • 1 medium yellow onion
  • 4 garlic cloves
  • 2 cups vegetable broth
  • 1 cup fresh basil leaves
  • 2 tablespoons extra-virgin olive oil
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Quarter tomatoes, halve onion, and place both on the baking sheet with whole garlic cloves.
  • Drizzle vegetables with olive oil, season with salt and pepper, then toss to coat.
  • Roast in the oven for 25-30 minutes until tomatoes are caramelized.
  • Transfer roasted vegetables to a blender; add basil and vegetable broth. Blend until smooth.
  • Heat the mixture in a pot over medium heat for about five minutes before serving.

Notes:

  • For added creaminess, stir in heavy cream after blending.
