Since the fritter batter comes together quickly, let’s make the avocado cilantro sauce first.

Make the avocado cilantro yogurt sauce by blending the ingredients in a blender until smooth. Season with salt and pepper and set it aside.

Feel free to make the sauce the day before. In fact, it tastes better as it sits.

  • 1 large egg
  • ¼ cup all-purpose flour
  • ¼ cup milk
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons oil
  • 2 tablespoons chopped cilantro for garnish
