Ingredients:
For the Crust:
24 Oreo cookies, crushed
1/4 cup unsalted butter, melted
For the Cheesecake Filling:
2 packages (8 ounces each) cream cheese, softened
1/3 cup granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon peppermint extract
1 cup heavy cream, whipped
15 Oreo cookies, chopped
A few drops of green food coloring (optional)
For the Topping:
Whipped cream
Crushed Oreo cookies
Mint leaves
Directions:
Mix crushed Oreo cookies and melted butter. Press into the bottom of a 9-inch springform pan. Chill in the refrigerator.
Beat cream cheese, sugar, vanilla extract, and peppermint extract until smooth. If desired, add green food coloring for a minty color. Gently fold in whipped cream and chopped Oreo cookies.
Spoon the filling over the crust, smoothing the top with a spatula. Refrigerate for at least 4 hours, or until set.
Before serving, garnish with whipped cream, crushed Oreo cookies, and mint leaves.
